POTD: Roasted Chicken

I know you'll be shocked to see another food-themed POTD. Our dinner tonight: chicken roasted with lemon, olive oil, garlic and rosemary served with roasted onion, pepper, carrot and potato.


The chicken was from today's SimplySourced delivery. Bill has been happily ordering "meat boxes" from these guys for a few months and has nothing but praise for the quality and service. We also received a pork butt, sirloin steak, chump steak, 1lb mince, 1lb pork sausages, beef shin, breakfast gammon, and a small pack of pork ribs--all from smaller, local Irish producers. The pork is from free-range Saddleback pigs and the beef is Long Horn! That makes for a full, euro-sized "freezer of wonders."

That looks absolutely beautiful and if it is as good as it looks I could eat the whole thing. That looks like one of those long narrow egg plants in front of the chicken! Boy! You have made me hungry! Too bad we don't have smellavision on computers.

I was intrigued by beef shin and chump steak - the latter sounds like paying rib-eye price for a chuck steak.
